Bresaola della Valtellina IGP is an Italian charcuterie produced by salting and curing of a cut of bovine thigh. Bresaola della Valtellina IGP is produced exclusively in the Sondrio province of the northern Italian region of Lombardia. The meat is characterised by its bright red colour, firm and elastic consistency, mild fragrance and delicate savoury flavour. It is generally consumed fresh in thin slices, however it is a versatile product and can be used as an ingredient in a variety of recipes including first courses, starters, salads, sandwiches and snacks for aperitifs. Bresaola della Valtellina IGP is typically paired with a red, slightly sour wine such as Rosso di Valtellina DOC.
