The careful selection of the varieties, combined with the analysis of the different plots and their exposure to the sun, has made it possible to create these monocultivar oils: each one is able to enhance the unique characteristics of the classic Chianti land. Moraiolo is an olive with a rounded shape: too many times it has been said that this variety produces oil in large quantities, but of low quality. The terraces of Chianti Classico help to dispel this cliché, enhancing the green, balsamic and very spicy notes typical of this vine.
